Egg Bhurji Sabji
Indian version of scrambled egg. Best served with toast. The spicier the better.

- ¼cup vegetable oil
- 1 teaspoon garam masala
- 1 teaspoon turmeric (ground)
- 1 teaspoon coriander (ground)
- salt (to taste)
- ½cup onion (finely chopped)
- 3 chile peppers (green sliced)
- 2 eggs (large)
Method

1. Heat oil in a skillet over medium heat; add garam masala, turmeric, coriander, and salt.

2. Cook and stir onion and green chile peppers in the seasoned oil until onion is slightly tender, about 5 minutes.

3. Crack eggs into the skillet and season with salt; cook and stir until eggs are set and scrambled, about 5 minutes.
